If you like pineapple as much as I do, mixing it into a cocktail is an easy win (and easy to make). Fresh and juicy, this pineapple martini is the perfect spring or summer cocktail, but really I like it all year. The pineapple offers natural sweetness while fresh lime offers a bit of pucker. Ingredients for Pineapple Martini
- Pineapple Juice (homemade or store-bought)
- Vodka
- Lime
- Sugar and pineapple for garnish (optional)
Variations
- Gin – Feel free to use gin if it’s what you prefer or if it’s just what you have on hand!
- Pineapple juice – use fresh homemade pineapple just to take your recipe up a notch (recipe below) or store bought for a short cut that still tastes great.
Homemade Pineapple Juice? Yes!
If you have a blender, you can make homemade pineapple juice. I like some pulp in my pineapple juice, so I don’t bother straining mine, but you can if you want. For this cocktail recipe, the cocktail shaker will strain out any larger pulp bits, so I find it unnecessary.
Pineapple Martini Recipe
Ingredients
Martini
- 2 ½ ounces pineapple juice
- 2 ounces vodka
- 1 large lime wedge
- sugar for the rim optional
- pineapple wedge optional for garnish
Easy Homemade Pineapple Juice
- 1 fresh pineapple chopped into cubes
- 6-7 cups water to taste
- ¼ cup sugar or agave nectar
- 1 juice from lemon or lime optional
Instructions
Martini
- Place sugar on a small plate. Dip the rim of the martini glass into water, holding the glass upside down. Gently dip the rim
- Place ice, juice, vodka, and juice from lime wedge in a cocktail shaker.
- Shake and strain into martini glass.
- Garnish with pineapple.
Easy Homemade Pineapple Juice
- Blend all ingredients together
- Add more sweetener and water if desired
- Serve immediately or within 1 day
- If you don’t want pulp, strain the mixture before using
