Creamy Cheesy Vegan Buffalo Jackfruit & Chickpea Sandwiches. This is a quick 1 PAN MEAL. Just throw everything in a pan, bake, and serve! The ease of this recipe makes it a great weeknight meal. No standing over the stove involved. This filling is great for sandwiches, burritos, or in a bowl with rice. I like serving this on toasted buns with fresh tomato and crunchy lettuce.
The green jackfruit gives a great shredded texture to bite into while the chickpeas help make the dish more hearty and satisfying. The vegan cream cheese is a perfect match with spicy buffalo sauce. You can’t beat it.

Ingredients
- green jackfruit (canned)
- chickpeas
- bell pepper
- buffalo sauce – did you know that many store-bought buffalo sauces happen to be vegan? It’s true! You can find them at Safeway, Wholefoods, and Kroger stores.
- vegan cream cheese
- spices

Variations
- Spicy – add in some red chili flakes when adding the rest of the spices.
- Other Uses – this filling also works great in a wrap with lettuce and tomato. A burrito version is also delicious with rice, avocado, and shredded cheese. Or keep it simple on top of rice and veggies.
- No Chickpeas – if you don’t have chickpeas, or simply don’t want to use them, this recipe works well with all jackfruit. The jackfruit will still provide a fantastic texture!
Buffalo Jackfruit and Chickpea Sandwiches Recipe
Ingredients
- 1 can green jackfruit I like to get the kind that is pre-sliced into wedges
- 1 can chickpeas
- 1 bell pepper sliced into strips
- 1 cup buffalo sauce
- 1 vegan cream cheese package
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon basil
- ½ teaspoon parsley
Instructions
- Place jackfruit & chickpeas in a baking dish.
- Smash with a potato masher or a fork. So jackfruit separates into a shredded texture.
- Add in sliced bell peppers.
- Drizzle buffalo sauce over everything.
- Add in dry spices.
- Mix well.
- Make space in the center of mixture and place cream cheese in the middle.
- Push buffalo mixture back around the cream cheese so the cheese is surrounded.
- Bake in at 375 degrees F° for 20 – 25 min.
- Take out of oven and mix everything together.
- Put filling in toasted and buttered buns with crunchy lettuce and fresh tomato slices.
Notes
- I like to serve this on toasted buns – Butter the inside of your bun and toast it in a hot pan for delicious, crispy, buttery buns!
- Sprinkle fresh chopped chives on top for some extra flavor and color.
