Making hummus at home is incredibly easy and CHEAP. Get on it! You have all the classic flavors of hummus here, with an added depth of flavor from the beets. I like using this hummus instead of a traditional dressing on pasta salad. You can also add a bit of extra liquid (lemon juice, oil, water) and use it as a salad dressing. Of course, it’s also great in all the classic ways – as a dip, on toast, sandwiches etc.

- Blender or Food Processor
Ingredients
- 1 can Chickpeas
- 1 Beet (cooked) Roasted, boiled, or steamed (OR buy them already cooked)
- 2 cloves Garlic Crushed
- 2-3 tbsp. Olive oil
- ¼ cup Tahini
- 1 Lemon Juiced
- ¼ tsp. Salt
- Dash Black pepper
Instructions
- Put everything in your food processor or blender and process until smooth and creamy. Scrape down the side with spatula as needed.
- When using as a dip, drizzle the top with olive oil and fresh herbs before serving.
